Golden, crispy triple cheese honey quesadillas, packed with Red Leicester, smoked cheddar, and classic cheddar, perfectly balanced with a drizzle of sweet honey. Served with a rich and creamy sour cream honey dip for the ultimate sweet, savoury indulgence.

Ingredients

  • 1kg Minced Beef

  • 2 Shallots (Diced)

  • 1 Red Sweet Pointed Pepper (Diced)

  • 2 Garlic Cloves

  • 1 Tbsp Turmeric

  • 1 Tbsp Smoked Paprika

  • 1 Tbsp Mixed Herbs

  • 1 Tbsp Chilli Powder

  • 1 Tbsp All Purpose Seasoning

  • Mature Cheddar Cheese

  • Red Leicester Cheese

  • Smoked Cheddar

  • Sour Cream

  • Chives

  • Runny Honey

Directions

  • Cook the Beef Filling
  • Heat a pan over medium heat and add a little butter.
  • Sauté the diced shallots, garlic and red sweet pointed pepper until softened.
  • Add the minced beef, breaking it apart as it browns. Stir in turmeric, smoked paprika, mixed herbs, chilli powder, and all-purpose seasoning.
  • Cook until the beef is fully browned and well-seasoned. Remove from heat and set aside.
  • Assemble the Quesadillas
  • Place a tortilla on a flat surface and sprinkle a generous amount of mature cheddar, Red Leicester, and smoked cheddar on one half.
  • Spoon the cooked beef mixture evenly over the cheese and fold the tortilla in half, pressing it down gently.
  • Cook the Quesadillas
  • Heat a pan/flat plate over medium heat and lightly grease it with oil or butter.
  • Place the folded tortilla in the pan and cook for 2–3 minutes on each side, until golden brown and crispy, and the cheese is melted. Repeat for the remaining quesadillas.
  • Prepare the Sour Cream Honey Dip and Enjoy
  • Spoon sour cream into a small bowl and drizzle with runny honey. Sprinkle chopped chives on top.
  • Slice the quesadillas into wedges and sprinkle with more chopped chives and honey. Serve warm with the sour cream honey dip on the side.

Notes

  • You can use lean minced beef for a less fatty option while still keeping the filling rich and flavourful. If using regular minced beef, you can drain excess fat after browning for a lighter dish.
