Over the years, I’ve developed a few foolproof methods to ensure your steak stays juicy and flavourful. Follow these steps for the best steak you’ve ever made.

1. First, If You’re Going to Slice Your Steak, Do It Before Cooking

If you plan to cut or slice your steak, make sure to do it before cooking. Cutting into a steak after cooking causes the juices to escape, which can dry out the meat. By slicing beforehand, you lock in all the moisture, keeping your steak tender and juicy.

2. Next, Cook Your Steak Slowly on Low Heat

Another important step is cooking your steak slowly. The key to cooking steak evenly without burning it is patience. In fact, cooking your steak on low heat for longer ensures an even cook throughout and avoids the risk of burning the outside while the inside remains undercooked.

3. Additionally, Use a Lid to Lock in Moisture When Cooking Steak

If you’re cooking your steak on a frying pan, don’t forget to cover the pan with a lid. This simple trick helps trap moisture inside, preventing your steak from drying out. Moreover, the steam keeps the steak tender and juicy while it cooks, ensuring the best results.

This chilli lime steak recipe combines zesty lime and spicy chilli for the perfect balance of heat and tang. Perfect as a main dish for brunch or dinner, this juicy steak is easy to make and bursting with flavour. Ideal for BBQs, weeknight meals, or a standout brunch main—prepare to wow your guests with a steak that’s as unforgettable as it is mouthwatering!

Ingredients

  • 300g Beef Steaks

  • 2 Tablespoons of Lime Juice

  • 1 Tablespoon of Chilli Flakes

  • 1 Garlic Clove (Chopped)

  • Handful of Spinach

  • Slice of Sourdough Bread

  • Red Pesto

  • 1/2 Teaspoon Salt

  • 1/2 Teaspoon Smoked Paprika

  • 1/2 Teaspoon Black Pepper

  • 1 Tablespoon Olive Oil

  • Sriracha Sauce to Serve (Optional)

Directions

  • In a mixing bowl, combine the lime juice, chilli flakes, salt, smoked paprika, black pepper, and olive oil. Stir well until all ingredients are thoroughly mixed.
  • Before marinating, cut your steak into even slices. This helps the marinade fully absorb and ensures each piece cooks evenly while staying juicy.
  • Place the sliced steak in the bowl with the marinade, making sure each piece is well-coated. Let the steak marinate for at least 10 minutes.
  • Remove the steak from the marinade and cook the slices to your preference, grill, pan-fry, or sear. For a nice char, sear the slices on high heat for about 1 minute per side, then lower the heat and continue cooking until done to your liking.
  • While the steak is cooking, toast slices of sourdough bread until golden and crispy. Spread a generous layer of red pesto on each slice.
  • On top of the pesto-spread sourdough, place a bed of fresh spinach leaves. Then, arrange the cooked steak slices over the spinach. For an extra kick, drizzle with sriracha sauce (optional).

Notes

  • Marinating Time: If you have the time, marinate the steak for up to 2 hours in the fridge to really infuse the flavours. The longer it marinates, the deeper the taste.
  • Spice Level: Adjust the chilli flakes and sriracha sauce to your desired spice level. If you prefer a milder steak, reduce the chilli or leave out the sriracha drizzle.
  • Pesto Swap: You can switch up the red pesto with basil pesto or even sun-dried tomato pesto for a different flavour twist.
  • Sourdough Substitute: If you don’t have sourdough, any rustic bread like ciabatta or a baguette works just as well.
  • Serving Ideas: Pair this dish with a side of roasted vegetables, sweet potato fries, or a light salad to balance the bold flavours of the steak.
  • Leftovers: The sliced steak can be used in wraps, salads, or sandwiches the next day. It also makes a great filling for tacos!
