Golden summer rolls with peanut sauce, fresh rice paper wraps filled with crisp vegetables, herbs, and rice noodles, served with creamy peanut dipping sauce, perfect for a healthy snack or light meal.

Ingredients

  • Vietnamese Rice Paper Extra Thin

  • 2 Carrots

  • Half of a Cucumber

  • Rice Vermicelli Noodles

  • Turmeric

  • Black Pepper

  • Cayenne Pepper

  • Cajun Seasoning

  • Peanut Sauce

  • Soy Sauce

  • Prawns, Chicken or Tofu (Optional)

  • Handful of Basil

  • Handful of Mint

  • Crispy Onion

  • Spring Onion

Directions

  • Prepare your carrots and cucumber by thinly peeling them into matchstick-sized strips and placing them in separate bowls.
  • Cook the rice noodles according to the package instructions, then drain and set aside too cool.
  • Optional: Prepare your protein by choosing from shrimp, chicken, or tofu and cook as desired.
  • Soak the rice paper one sheet at a time in warm water for about 10-15 seconds until soft and pliable. Lay it flat on a clean, damp surface.
  • Assemble the rolls by layering the vegetables, protein, rice noodles, and fresh herbs in the centre of the rice paper.
  • Fold the sides of the rice paper inwards, then roll tightly from the bottom to enclose the filling.
  • For extra crispiness, double wrap your summer rolls by adding a second sheet of rice paper around the first, then fry the assembled rolls in hot oil until golden and crispy.
  • Serve with peanut sauce, soy sauce, crispy onion and spring onion.

Notes

  • Rice Paper Tips: Be gentle when soaking the rice paper in water, as it can tear easily. Only soak one sheet at a time to avoid sticking.
  • Freshness: Summer rolls are best eaten fresh, but if you need to store them, wrap them in damp paper towels and place them in an airtight container in the fridge for up to a day.
  • Double Wrapping: Double wrapping the summer rolls adds a crispy texture when frying and helps keep the filling intact. If you're not frying, a single wrap is fine.
